This Beef Stroganoff Meatloaf Recipe is a delicious twist on a classic meatloaf! Hearty and flavourful beef smothered in a creamy and delicious stroganoff gravy with mushrooms.
Combine the ground beef, minced onion, egg, salt and pepper.
Press the meat mixture down into a 9 x 5 " loaf pan.
Bake for 1 hour, 30 minutes. The internal temperature should be 160 degrees F when done.
Stroganoff Gravy:
While the meatloaf is baking make the stroganoff gravy.
In a large skillet melt 2 tbsp butter, then add the mushrooms and soy sauce. Cook the mushrooms down until the liquid disappears and the mushrooms are golden (see image above).
When the mushrooms are done, stir in 2 tbsp of flour, and cook for about 2 minutes, stirring constantly
Add the consommé and let the mixture simmer until it thickens.
Stir in the sour cream and milk. Simmer for a few minutes.
Season generously with fresh ground black pepper.
When the meatloaf is done drain the excess juices, then place onto a serving plate.
Slice the meatloaf then pour the stroganoff gravy over the top and serve!
