Beef Stroganoff Meatloaf Recipe

This Beef Stroganoff Meatloaf Recipe is a delicious twist on a classic meatloaf! Hearty and flavourful beef smothered in a creamy and delicious stroganoff gravy with mushrooms.

Ingredients
  

Beef Meatloaf:

  • 2 1/2 lb lean ground beef
  • 2 tbsp minced onion
  • 1 large egg
  • 1/8 tsp salt
  • fresh ground pepper

Stroganoff Gravy:

  • 2 cups sliced mushrooms
  • 2 tbsp butter
  • 2 tsp soy sauce
  • 2 tbsp all purpose flour
  • 1 284 mL can consommé
  • 1 cup sour cream
  • 1/4 cup milk or water
  • fresh ground pepper

Instructions
 

Beef Meatloaf:

  • Preheat your oven to 350 degrees F.
  • Combine the ground beef, minced onion, egg, salt and pepper.
  • Press the meat mixture down into a 9 x 5 " loaf pan.
  • Bake for 1 hour, 30 minutes. The internal temperature should be 160 degrees F when done.

Stroganoff Gravy:

  • While the meatloaf is baking make the stroganoff gravy.
  • In a large skillet melt 2 tbsp butter, then add the mushrooms and soy sauce. Cook the mushrooms down until the liquid disappears and the mushrooms are golden (see image above).
  • When the mushrooms are done, stir in 2 tbsp of flour, and cook for about 2 minutes, stirring constantly
  • Add the consommé and let the mixture simmer until it thickens.
  • Stir in the sour cream and milk. Simmer for a few minutes.
  • Season generously with fresh ground black pepper.
  • When the meatloaf is done drain the excess juices, then place onto a serving plate.
  • Slice the meatloaf then pour the stroganoff gravy over the top and serve!
