Chewy Ginger Oatmeal Cookies

These Chewy Ginger Oatmeal Cookies are soft, chewy and full of delicious ginger flavour! A perfect holiday (or any day) cookie. Easy to make and freeze ahead of time.

Ingredients
  

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 2 tbsp fancy molasses
  • 1 tbsp finely minced fresh ginger
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 1/2 cups quick oats
  • 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 salt

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Line a baking sheet with parchment paper. Set aside.
  • Using a stand mixer combine the butter and brown sugar until creamy.

  • Add the egg. Mix well.

  • Add the vanilla, molasses, minced fresh ginger, ground ginger and cinnamon. Mix until creamy and smooth.

  • In a separate bowl whisk together the oats, flour, baking soda, baking powder and salt.

  • Add the dry ingredient to the butter mixture and combine.
  • Shape the cookie dough into 1 1/2 inch balls and place them on a parchment lined baking sheet. Lightly press down the tops (see tips above for shaping).
  • Place on the prepared baking sheet, 8 balls at a time evenly spread out.
  • Bake for 10 to 12 minutes (the less time, the more chewy they will be).
  • Let cool on a wire baking rack.
