Preheat a pancake griddle (or large non-stick pan) to low-medium heat.
In a large bowl whisk together the flour, baking powder, baking soda, sugar and salt.1 1/3 cup all purpose flour, 2 tsp baking powder, 1/2 tsp baking soda, 2 tbsp granulated sugar, 1/8 tsp salt
In a separate bowl whisk together the milk, eggs, cottage cheese, melted butter and vanilla. Mix well.1 cup milk, 2 large eggs, 1 cup cottage cheese, 3 tbsp melted butter, 1 tsp vanilla extract
Add the wet ingredients to the dry ingredients, then combine by lightly mixing together.
Let the batter rest for about 10 minutes.
Onto the preheated griddle, scoop about 1/4 cup batter for each pancake.
Cook for about 2-3 minutes each side, or until you see the small bubbles popping. The tops of the pancakes should be golden brown.
