Turn leftover mashed potatoes into these Easy Leftover Mashed Potato Pancakes! They make a great snack, light lunch or side dish for breakfast or dinner. Made with simple ingredients, this easy recipe is so delicious.
Preheat a griddle (or large non-stick skillet) to medium heat.
In a large bowl mix together the mashed potatoes, onion and egg.
Then stir in the flour, salt and pepper.
Add about 2 - 3 tbsp of oil to the warmed griddle, making sure to fully cover the pan.
Scoop about 1/3 cup of the potato mixture for each pancake, onto the hot griddle.
Cook for about 2-3 minutes each side. The tops of the pancakes should be golden brown. If you want crispy potato pancakes, make sure you use enough oil, and cook them a bit longer.
