Apple Pie Oat Bars

These Apple Pie Oat Bars are so tasty! A flavourful apple pie filling sits between a buttery oat crust and cinnamon oat topping. They taste like an apple pie crumble, but in a bar.

Ingredients
  

Apple Pie Filling:

  • 5 cups chopped apples about 5 - 6 apples, peeled and chopped
  • 1 tbsp butter
  • 1 tbsp water
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon

Oat Bar:

  • 1 1/4 cups all purpose flour
  • 1 1/4 cups quick oats
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup butter melted

Cinnamon Sugar Topping (optional)

  • 1/8 tsp ground cinnamon
  • 2 tsp granulated sugar

Instructions
 

  • Preheat your oven to 350 degrees F.
  • Line a 9 x 9 inch baking pan with parchment paper (making sure that the parchment paper goes up the sides too - see picture above). Set aside.

Apple Pie Filling:

  • Peel, core and chop the apples into small pieces.
  • Add the chopped apples, butter, water, brown sugar and cinnamon to a large skillet.
    5 cups chopped apples, 1 tbsp butter, 1 tbsp water, 2 tbsp brown sugar, 1 tsp ground cinnamon
  • Simmer the apple mixture on low-medium heat for about 10-15 minutes. You want the apples soft, yet still slightly chunky.
  • Set aside to cool slightly.

Oat Bar:

  • In a large mixing bowl combine the flour, oats, sugar, cinnamon and salt.
    1 1/4 cups all purpose flour, 1 1/4 cups quick oats, 1/2 cup granulated sugar, 1 tsp ground cinnamon, 1/4 tsp salt
  • Stir in the melted butter. Mix until combined.

  • Measure out 1/2 cup of the oat mixture and set it aside for later (this part is the topping).
  • Press the remaining oat mixture into the prepared baking pan. Press firmly and evenly into the bottom of the pan.

Putting it all together:

  • Spread the cooked apple mixture evenly over the top of the bottom oat crust (see picture above).
  • Sprinkle the 1/2 cup of oat mixture that was set aside, over the top of the apples. You can sprinkle it evenly or randomly over the top.
  • Sprinkle with cinnamon and sugar.
    1/8 tsp ground cinnamon, 2 tsp granulated sugar
  • Bake for 1 hour. The top should be golden and the apple pie mixture bubbling.
  • Let cool for at least 2 hours before cutting into it (or it will be very messy).
