If you’re looking for the ultimate fall apple treat, these Apple Pie Oat Bars are it! They smell and taste like fall. Cinnamon-y, apple-y, oat-y, yummy.

Is there any better flavour combination than apples and cinnamon together? Then baked into a soft, buttery oat crust? The best. And so so perfect for any time of year, but especially in fall when all the best apples fill the markets. Sigh. It’s the best time of year. If you weren’t convinced to make these Apple Pie Oat Bars yet, I hope you are now!

Is it dessert? Is it Breakfast?
The answer is yes. Yes it is. It’s dessert with a scoop of ice cream. It’s breakfast wth a slice of cheddar cheese. I’m not wrong. 😉 I hope you try these apple bars and love them!



Apple Pie Oat Bars Recipe Tips
- Apples: Use any of your favourite fresh apples for these bars. We love McIntosh apples, but Granny Smith, gala apples, pink lady apples, and honey crisp apples are great too.
- Oats: Use quick oats.
- Line the pan: For best results use parchment paper to line the bottom and up the sides of a 9 × 9 inch baking pan. This makes it easy to remove the bars from the pan, and also prevents the filling from burning on the edges.
- Make the apple pie filling first. So it has time to cool slightly before spreading it over the oat crust.
- Let them rest: Don’t cut into the baked apple bars too soon or you will end up with a goopy mess. Allow them to rest/chill for at least 2 hours. They can sit on a wire rack on the kitchen counter (I do this), or you can put them in the fridge.
- Storage: These apple oat bars will last for about 3 – 5 days. I just keep mine covered on my kitchen counter, but you can store them in the fridge too, they’ll last a little longer this way.
- Freezing: I don’t recommend freezing these. The oat crust will become just too soft.
- Serving suggestion: These apple pie oat bars are delicious with a scoop of vanilla ice cream or a slice of cheddar cheese (THE BEST!).

A quick look at assembly:
These bars are simple to put together. Start with the oat bar layer (minus 1/2 cup for the topping), add the cooked apple pie filling, then top with 1/2 cup more oat mixture. Bake.



Apple Pie Oat Bars
Ingredients
Apple Pie Filling:
- 5 cups chopped apples about 5 – 6 apples, peeled and chopped
- 1 tbsp butter
- 1 tbsp water
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
Oat Bar:
- 1 1/4 cups all purpose flour
- 1 1/4 cups quick oats
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup butter melted
Cinnamon Sugar Topping (optional)
- 1/8 tsp ground cinnamon
- 2 tsp granulated sugar
Instructions
- Preheat your oven to 350 degrees F.
- Line a 9 x 9 inch baking pan with parchment paper (making sure that the parchment paper goes up the sides too – see picture above). Set aside.
Apple Pie Filling:
- Peel, core and chop the apples into small pieces.
- Add the chopped apples, butter, water, brown sugar and cinnamon to a large skillet.5 cups chopped apples, 1 tbsp butter, 1 tbsp water, 2 tbsp brown sugar, 1 tsp ground cinnamon
- Simmer the apple mixture on low-medium heat for about 10-15 minutes. You want the apples soft, yet still slightly chunky.
- Set aside to cool slightly.
Oat Bar:
- In a large mixing bowl combine the flour, oats, sugar, cinnamon and salt.1 1/4 cups all purpose flour, 1 1/4 cups quick oats, 1/2 cup granulated sugar, 1 tsp ground cinnamon, 1/4 tsp salt
- Stir in the melted butter. Mix until combined.1/2 cup butter
- Measure out 1/2 cup of the oat mixture and set it aside for later (this part is the topping).
- Press the remaining oat mixture into the prepared baking pan. Press firmly and evenly into the bottom of the pan.
Putting it all together:
- Spread the cooked apple mixture evenly over the top of the bottom oat crust (see picture above).
- Sprinkle the 1/2 cup of oat mixture that was set aside, over the top of the apples. You can sprinkle it evenly or randomly over the top.
- Sprinkle with cinnamon and sugar.1/8 tsp ground cinnamon, 2 tsp granulated sugar
- Bake for 1 hour. The top should be golden and the apple pie mixture bubbling.
- Let cool for at least 2 hours before cutting into it (or it will be very messy).
