This Beef Stroganoff Meatloaf Recipe is a delicious twist on a classic meatloaf! Hearty and flavourful beef smothered in a creamy and delicious stroganoff gravy with mushrooms.
Combine the ground beef, minced onion, egg, salt and pepper.2 1/2 lb lean ground beef, 2 tbsp minced onion, 1 large egg, 1/8 tsp salt, fresh ground pepper
Press the meat mixture down into a 9 x 5 " loaf pan.
Bake for 1 hour, 30 minutes. The internal temperature should be 160 degrees F when done.
Stroganoff Gravy:
While the meatloaf is baking make the stroganoff gravy.
In a large skillet melt 2 tbsp butter, then add the mushrooms and soy sauce. Cook the mushrooms down until the liquid disappears and the mushrooms are golden (see image above).2 tbsp butter, 2 cups sliced mushrooms, 2 tsp soy sauce
When the mushrooms are done, stir in 2 tbsp all purpose flour, and cook for about 2 minutes, stirring constantly
Add the consommé and let the mixture simmer until it thickens.1 284 mL can consommé
Stir in the sour cream and milk. Simmer for a few minutes.1 cup sour cream, 1/4 cup milk or water
Season generously with fresh ground black pepper.fresh ground pepper
When the meatloaf is done drain the excess juices, then place onto a serving plate.
Slice the meatloaf then pour the stroganoff gravy over the top and serve!
