This meatloaf is really just a giant meatball smothered in stroganoff sauce, but so much easier because there’s no finicky prep of rolling meatballs! Just slice and smother in the creamy sauce. So good.

This Beef Stroganoff Meatloaf is quick and simple, and can be on your table in about 1 hour and 45 minutes (most of this time is just the meatloaf baking). This recipe is also great because all of the ingredients are simple, you probably have all of them in your kitchen already!
Beef Stroganoff Meatloaf Recipe Tips:
- Beef: Make with lean ground beef.
- Consommé: If you don’t have consommé you can also use beef broth.
- Mushrooms: Don’t love mushrooms? No problem, you can just leave them out.
- If the sauce is too thick? Just stir in a tablespoon of milk or water at a time, until the sauce is the consistency you like.
- Leftovers: Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave.

Beef Stroganoff Meatloaf Recipe
Ingredients
Beef Meatloaf:
- 2 1/2 lb lean ground beef
- 2 tbsp minced onion
- 1 large egg
- 1/8 tsp salt
- fresh ground pepper
Stroganoff Gravy:
- 2 cups sliced mushrooms
- 2 tbsp butter
- 2 tsp soy sauce
- 2 tbsp all purpose flour
- 1 284 mL can consommé
- 1 cup sour cream
- 1/4 cup milk or water
- fresh ground pepper
Instructions
Beef Meatloaf:
- Preheat your oven to 350 degrees F.
- Combine the ground beef, minced onion, egg, salt and pepper.
- Press the meat mixture down into a 9 x 5 " loaf pan.
- Bake for 1 hour, 30 minutes. The internal temperature should be 160 degrees F when done.
Stroganoff Gravy:
- While the meatloaf is baking make the stroganoff gravy.
- In a large skillet melt 2 tbsp butter, then add the mushrooms and soy sauce. Cook the mushrooms down until the liquid disappears and the mushrooms are golden (see image above).
- When the mushrooms are done, stir in 2 tbsp of flour, and cook for about 2 minutes, stirring constantly
- Add the consommé and let the mixture simmer until it thickens.
- Stir in the sour cream and milk. Simmer for a few minutes.
- Season generously with fresh ground black pepper.
- When the meatloaf is done drain the excess juices, then place onto a serving plate.
- Slice the meatloaf then pour the stroganoff gravy over the top and serve!
