Cinnamon Sugar Cookies

These Cinnamon Sugar Cookies are soft, sweet, slightly chewy and cinnamon-y, kind of like a snickerdoodle. Perfect for the holidays!

Ingredients
  

Cinnamon Sugar Cookie

  • 1 cup butter
  • 1 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 2 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt

Cinnamon Sugar Topping

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat your oven to 350 degrees F.
  • In a small bowl mix the 1/4 cup white sugar with 1 tsp of ground cinnamon. Set aside.
  • Using a mixer cream the butter and sugar together until fluffy. This will take about 10-15 minutes. Make sure to the scrape the sides of the bowl several times during this mixing.

  • Once the sugar and butter mixture is fluffy, add the egg and vanilla and mix well.
    1 large egg, 1 1/2 tsp vanilla extract
  • In a separate bowl whisk together the flour, baking powder and salt.
    2 1/2 cups all purpose flour, 2 tsp baking powder, 1/4 tsp salt
  • Add the dry ingredients to the wet ingredients and mix well.
  • Roll the cookie dough into 1 1/2 inch balls.
  • Now it's time to roll the cookie dough balls in the cinnamon sugar mix. Dump the cinnamon sugar mixture that you made already onto a large dinner plate, then roll the balls in it on there.
    1/4 cup granulated sugar, 1 tsp ground cinnamon
  • Place the dough balls on a parchment paper lined cookie sheet about 1 1/2 inches apart, and flatten the tops slightly.
  • Bake for 10 - 12 minutes (the edges should be only slightly golden).
  • Let the cookies cool on a wire rack.
