About this recipe:
These Cinnamon Sugar Cookies are made with a sugar cookie base (the same base I used for my Gumdrop Cookies), and they’re rolled in a cinnamon/sugar mixture, then baked. They’re kind of like a snickerdoodle cookie, but I think I like these better! They’re buttery, a little chewy, nice and soft and taste like cinnamon sugar. So good.

I just happen to know that Santa loves these cookies haha! But honestly, they’re such a simple cookie that I think most people would love…you just can’t go wrong with a buttery sugar cookie with cinnamon. Yum. Perfect with a cup of tea or coffee.
Cinnamon Sugar Cookie Recipe Tips
- Crackling: These cookies have a crinkle look to them that I actually really like! The cinnamon sugar mix just crackles during the baking process.
- Storage: Keep cookies in an airtight container or they will dry out.
- Freezing: These cookies freeze really well. Store in a freezer ziplock bag or airtight container in the freezer for up to 1 month.
Cinnamon Sugar Cookies
Ingredients
Cinnamon Sugar Cookie
- 1 cup butter
- 1 1/4 cup granulated sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
- 2 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
Cinnamon Sugar Topping
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
Instructions
- Preheat your oven to 350 degrees F.
- In a small bowl mix the 1/4 cup white sugar with 1 tsp of ground cinnamon. Set aside.
- Using a mixer cream the butter and sugar together until fluffy. This will take about 10-15 minutes. Make sure to the scrape the sides of the bowl several times during this mixing.
- Once the sugar and butter mixture is fluffy, add the egg and vanilla and mix well.
- In a separate bowl whisk together the flour, baking powder and salt.
- Add the dry ingredients to the wet ingredients and mix well.
- Roll the cookie dough into 1 1/2 inch balls.
- Now it's time to roll the cookie dough balls in the cinnamon sugar mix. Dump the cinnamon sugar mixture that you made already onto a large dinner plate, then roll the balls in it on there.
- Place the dough balls on a parchment paper lined cookie sheet about 1 1/2 inches apart, and flatten the tops slightly.
- Bake for 10 – 12 minutes (the edges should be only slightly golden).
- Let the cookies cool on a wire rack.
