Creamy Skillet White Beans

These Creamy Skillet White Beans are an easy and flavourful side dish (or light main dish). With flavours of lemon, basil, sun dried tomatoes and Parmesan cheese.

Ingredients
  

  • 2 540 mL cans white navy beans drained and rinsed
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 tbsp tomato paste
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 3/4 cup chopped jarred sun dried tomatoes
  • 1 1/2 cups broth (chicken broth or vegetable broth)
  • 1 cup Greek yogurt
  • 1/2 cup chopped fresh basil
  • 3 cups fresh spinach
  • 1 tbsp fresh lemon zest
  • 1/2 cup grated parmesan cheese

Instructions
 

  • Rinse the beans with water, drain, then set aside.
  • In a large skillet over medium heat, warm up 2 tbsp of olive oil, then add the chopped onions and garlic. Sauté until the onions and garlic are soft, about 5 minutes.

  • Stir in the beans, tomato paste, Italian seasoning, salt, pepper, sun dried tomatoes and broth. Mix well.

  • Let simmer for about 5 minutes.
  • Stir in the yogurt, fresh basil, spinach and lemon zest. Simmer for about 3 minutes, until the spinach has wilted.

  • Sprinkle with parmesan cheese and serve!
