Creamy Skillet White Beans Recipe Tips
- BEANS: This recipe calls for navy beans but you can also use white kidney beans (cannellini beans).
- YOGURT: This recipe calls for Greek yogurt but you can use sour cream instead.
- SUN DRIED TOMATOES: Use sun dried tomatoes that are packed in oil from a jar.
- SPINACH: Use fresh spinach. I suggested 3 cups, but you can add more if you like.
- BASIL: Fresh basil is always best! If you don’t have it you can substitute it with 1 tsp dried.
- LEMON ZEST: Fresh lemon zest adds a nice bright flavour to this dish. Don’t skip it!
- GARNISH OPTIONS: Add more grated parmesan cheese to the top of the finished beans.
- STORAGE: Keep any leftovers in an airtight container in the fridge.

Serving Suggestions
These beans are delicious with roast chicken or steak. Or enjoy them with some crusty bread…bread is absolutely delicious dipped into or served smothered in these beans. So yummy.


Creamy Skillet White Beans
Ingredients
- 2 540 mL cans white navy beans drained and rinsed
- 2 tbsp olive oil
- 1 large onion chopped
- 2 cloves garlic minced
- 4 tbsp tomato paste
- 2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 3/4 cup chopped jarred sun dried tomatoes
- 1 1/2 cups broth (chicken broth or vegetable broth)
- 1 cup Greek yogurt
- 1/2 cup chopped fresh basil
- 3 cups fresh spinach
- 1 tbsp fresh lemon zest
- 1/2 cup grated parmesan cheese
Instructions
- Rinse the beans with water, drain, then set aside.
- In a large skillet over medium heat, warm up 2 tbsp of olive oil, then add the chopped onions and garlic. Sauté until the onions and garlic are soft, about 5 minutes.2 tbsp olive oil, 1 large onion, 2 cloves garlic

- Let simmer for about 5 minutes.

- Sprinkle with parmesan cheese and serve!1/2 cup grated parmesan cheese
