Preheat your oven to 350 degrees F.
Prepare a baking sheet by lightly oiling the surface. You can use a light spray of cooking oil, or use a pastry brush to spread on a some olive oil (I'm generous with the olive oil as you can see in the pictures). You can also line the pan with parchment paper if you prefer.
In a mixing bowl combine 1 cup cottage cheese and 1 large egg. Mix well.
In a separate mixing bowl combine 2 cups almond flour, 1 tsp baking powder and 1/2 tsp salt.
Add the dry ingredients to the wet ingredients and mix well.
Gather the bagel dough into a ball, then knead until smooth. The dough will be sticky, so mix it as well as you can.
Split the ball into 6 equal portions.
Roll each small piece into a ball, then make a hole in the middle. Use your hands to shape the dough into the classic bagel shape. I do this by pressing the ball into a disk, then make a hole in the middle. You might find it easier to finish the shaping once the dough is laid out on the prepared baking sheet.
Place the bagels onto the prepared baking sheet, spacing them out evenly.
Sprinkle on whichever toppings/seasonings you are using. You can use everything bagel spice, or coarse salt, or coarse sugar, it's up to you. Sometimes I make a mixture of different kinds. I find that the dough is sticky enough to hold the toppings, so no egg wash is necessary.
Bake for 20-25 minutes. The tops of the bagels should be lightly golden brown.
