Easy Cottage Cheese Bagels
These Cottage Cheese Bagels are so simple and quick to make! So if you’re looking for a delicious, warm, homemade bagel made with extra protein, these are it!

These bagels are made with only 5 simple ingredients (not including the toppings).

As you can see this cottage cheese bagel recipe includes almond flour, NOT regular all purpose flour. So because of that you’ll notice that the texture and appearance of these bagels are different than what you expect from traditional bagels. These are soft, moist and delicious, but they’re not chewy like regular bagels, they have a more tender crumb. But you won’t even miss the regular flour, these cottage cheese bagels are delicious, with the bonus of them being a high protein bagel (and can be made as gluten free).

Serving Suggestions:
These homemade bagels are amazing served with cream cheese and cucumbers. You can also add jam or jelly, I personally love plain ones with peanut butter! They’re delicious for open-faced sandwiches: like egg salad, ham and cheese, or try them with this homemade chicken salad). The possibilities are endless!


Cottage Cheese Bagels Recipe Tips
- Cottage Cheese: You can use any kind of cottage cheese: low fat cottage cheese, 1%, 2% or full fat cottage cheese. If the cottage cheese has a lot of liquid, drain it off first.
- Almond Flour: Use superfine grind almond flour. I like the Kirkland brand from Costco.
- Topping Ideas: There are so many different toppings you can try, either savory or sweet:
- Everything Bagel Seasoning
- Maldon Salt Flakes or any course salt
- Sugar: regular or coarse
- Poppy seeds
- Sesame seeds
- Storage: Keep these bagels in an airtight container at room temperature to keep them soft.
- Freezing: You can freeze these. Store in an airtight freezer bag for up to 1 month.

Shaping the Dough
The biggest thing to note is that the dough WILL BE STICKY. That’s ok, these bagels aren’t perfect. When I shape the dough into bagels, this is what I do.
- Split the large ball of dough into 6 pieces.
- Roll each small piece into a ball, then make a hole in the middle.
- Use your hands to shape the dough into a bagel. I do this by pressing the ball into a disk, then make a hole in the middle.
- Tip! You might find it easier to finish the shaping of the bagel once the dough is laid out on the prepared baking sheet. Try to squish the dough into shape to prevent cracking as much as you can.






Easy Cottage Cheese Bagels
Ingredients
Bagels:
- 1 cup cottage cheese
- 1 large egg
- 2 cups almond flour
- 1 tsp baking powder
- 1/2 tsp salt
Toppings: (these are optional and versatile)
- everything bagel spice
- coarse salt
- coarse sugar
Instructions
- Preheat your oven to 350 degrees F.
- Prepare a baking sheet by lightly oiling the surface. You can use a light spray of cooking oil, or use a pastry brush to spread on a some olive oil (I'm generous with the olive oil as you can see in the pictures). You can also line the pan with parchment paper if you prefer.
- In a mixing bowl combine 1 cup cottage cheese and 1 large egg. Mix well.
- In a separate mixing bowl combine 2 cups almond flour, 1 tsp baking powder and 1/2 tsp salt.
- Add the dry ingredients to the wet ingredients and mix well.
- Gather the bagel dough into a ball, then knead until smooth. The dough will be sticky, so mix it as well as you can.
- Split the ball into 6 equal portions.
- Roll each small piece into a ball, then make a hole in the middle. Use your hands to shape the dough into the classic bagel shape. I do this by pressing the ball into a disk, then make a hole in the middle. You might find it easier to finish the shaping once the dough is laid out on the prepared baking sheet.
- Place the bagels onto the prepared baking sheet, spacing them out evenly.
- Sprinkle on whichever toppings/seasonings you are using. You can use everything bagel spice, or coarse salt, or coarse sugar, it's up to you. Sometimes I make a mixture of different kinds. I find that the dough is sticky enough to hold the toppings, so no egg wash is necessary.
- Bake for 20-25 minutes. The tops of the bagels should be lightly golden brown.
