In a large skillet warm about 1 tbsp olive oil over medium heat.
Add the chopped onions, peppers, garlic, pork, salt, pepper and Italian seasoning. Cook until the ground pork is cooked and no longer pink. In a separate bowl whisk 6 large eggs. Then stir in 1 1/2 cups shredded cheddar cheese and 1/2 cup cottage cheese. Mix well.
In another bowl mix together the dry ingredients: 1 1/2 cups almond flour, 1/2 cup all purpose flour and 2 tsp baking powder.
Now in a large mixing bowl combine the cooked sausage mixture, flour mixture and egg mixture. Mix well.
Line a baking sheet with parchment paper.
Use 1/3 cup for each biscuit and drop the biscuit dough onto the prepared baking sheet, about 2 inches apart. Lightly press the batter down, you don't want them heaping.
Bake for 15 - 18 minutes. The bottoms of the biscuits should golden brown, and the tops firm.
