Easy Homemade Sausage Breakfast Biscuits (with cottage cheese)

These easy drop Sausage Breakfast Biscuits are made with delicious and healthy ingredients. A perfect breakfast for busy mornings.

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1 medium red bell pepper chopped
  • 1 lb lean ground pork
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp Italian seasoning
  • 6 large eggs
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup cottage cheese
  • 1 1/2 cups almond flour
  • 1/2 cup all purpose flour
  • 2 tsp baking powder

Instructions
 

  • Preheat your oven to 375 degrees F.
  • In a large skillet warm about 1 tbsp olive oil over medium heat.
  • Add the chopped onions, peppers, garlic, pork, salt, pepper and Italian seasoning. Cook until the ground pork is cooked and no longer pink. Drain any excess fat if necessary.

  • In a separate bowl whisk 6 large eggs. Then stir in 1 1/2 cups shredded cheddar cheese and 1/2 cup cottage cheese. Mix well.
  • In another bowl mix together the dry ingredients: 1 1/2 cups almond flour, 1/2 cup all purpose flour and 2 tsp baking powder.
  • Now in a large mixing bowl combine the cooked sausage mixture, flour mixture and egg mixture. Mix well.
  • Line a baking sheet with parchment paper.
  • Use 1/3 cup for each biscuit and drop the biscuit dough onto the prepared baking sheet, about 2 inches apart. Lightly press the batter down, you don't want them heaping.
  • Bake for 15 - 18 minutes. The bottoms of the biscuits should golden brown, and the tops firm.
