Easy Homemade Sausage Breakfast Biscuits (with cottage cheese)
If you’re looking for a protein packed, easy grab-and-go breakfast for busy mornings, these homemade biscuits are a delicious option! This easy biscuit recipe makes a big batch of 12 – 14 large drop biscuits.

Perfect for busy mornings!
I like to make a batch of these breakfast biscuits to have ready for the week ahead. That way we can just grab one from the fridge, heat it up quickly in the microwave, air fryer or toaster oven, and breakfast is ready! These are especially great for busy mornings when you need a healthy grab-and-go breakfast. But they’re also a great addition to brunch with scrambled eggs and a fruit salad.

Breakfast Biscuits Recipe Tips
- Sausage: This recipe uses lean ground pork. If you choose to use other pork sausage like a breakfast sausage, make sure to drain any excess fat before mixing it into the rest of the ingredients.
- Peppers: This recipe calls for red bell pepper, but of course you can use any type of bell pepper: red, orange, yellow or green.
- Cheese: This recipe calls for shredded cheddar cheese but you can use any of your favourite cheeses: cheddar, Monterey Jack, Swiss, Havarti, mozzarella…
- Cottage Cheese: You can use any kind of cottage cheese: 1%, 2% or full fat cottage cheese. If the cottage cheese has a lot of liquid, drain it off first.
- Flours: This recipe uses almond flour and all purpose flour.
- Storage: If you’re making them ahead of time to enjoy, or want to store leftovers, keep them in an airtight container in the fridge for up to 4 days.
- Freezing: These biscuits freeze well. Store in an airtight container or freezer bag.

So simple to make.
These biscuits come together quickly, so you can have a fresh batch ready to enjoy in less than an hour! First cook the sausage, onions, garlic, spices and peppers. Then whisk together the flours and baking powder in one bowl, and the egg and cheeses in another. Then mix the 3 bowls together and you’re ready to drop the batter onto a baking sheet for baking.


Shaping the biscuits:
These are a drop biscuit, meaning that you drop the biscuit batter onto a parchment paper lined baking sheet. The batter is soft, so it’s not easily rolled into biscuits, instead the batter is ‘dropped’ onto the sheet with a spoon. I made 14 biscuits with this recipe, so I placed 7 on each baking sheet. But if you want 12, just place 6. The biscuits spread out a little, so make sure to give them space, at least 2 inches between them. Don’t heap the batter, lightly press the biscuits down into an even level before baking.


Easy Homemade Sausage Breakfast Biscuits (with cottage cheese)
Ingredients
- 1 tbsp olive oil
- 1 medium onion chopped
- 1 clove garlic minced
- 1 medium red bell pepper chopped
- 1 lb lean ground pork
- 1 tsp salt
- 1/4 tsp ground black pepper
- 1 tsp Italian seasoning
- 6 large eggs
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup cottage cheese
- 1 1/2 cups almond flour
- 1/2 cup all purpose flour
- 2 tsp baking powder
Instructions
- Preheat your oven to 375 degrees F.
- In a large skillet warm about 1 tbsp olive oil over medium heat.
- Add the chopped onions, peppers, garlic, pork, salt, pepper and Italian seasoning. Cook until the ground pork is cooked and no longer pink. Drain any excess fat if necessary.1 medium onion, 1 clove garlic, 1 medium red bell pepper, 1 lb lean ground pork, 1 tsp salt, 1/4 tsp ground black pepper, 1 tsp Italian seasoning
- In a separate bowl whisk 6 large eggs. Then stir in 1 1/2 cups shredded cheddar cheese and 1/2 cup cottage cheese. Mix well.
- In another bowl mix together the dry ingredients: 1 1/2 cups almond flour, 1/2 cup all purpose flour and 2 tsp baking powder.
- Now in a large mixing bowl combine the cooked sausage mixture, flour mixture and egg mixture. Mix well.
- Line a baking sheet with parchment paper.
- Use 1/3 cup for each biscuit and drop the biscuit dough onto the prepared baking sheet, about 2 inches apart. Lightly press the batter down, you don't want them heaping.
- Bake for 15 – 18 minutes. The bottoms of the biscuits should golden brown, and the tops firm.

Hello, could I use all purpose flour instead of almond flour? I don’t usually have it in my pantry. Looks delicious!
Hi Lola! I’ve never made them without almond flour, so I don’t know for sure how they’ll turn out. But almond flour can usually be substituted 1:1 with all purpose flour.
