Oatmeal Banana Bread

This Oatmeal Banana Bread is everything you love about classic banana bread but with the addition of oats. It's hearty, moist and so delicious.

Ingredients
  

  • 3 ripe bananas, mashed
  • 1 1/4 cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1 cup quick oats
  • 3/4 cup brown sugar
  • 1/4 cup milk
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350 degrees F.
  • Use a fork to mash the bananas and set aside.

  • Prepare a loaf pan by lining it with parchment paper. Set aside.
  • In a large bowl whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, quick oats and brown sugar. Set aside.

  • In a separate bowl whisk together the milk, eggs, melted butter and vanilla.

  • Then add the flour mixture to the milk mixture and mix well.
  • Stir in the mashed bananas.
  • Pour the batter into the prepared loaf pan.
  • Bake for about 1 hour, 10 minutes, or until a toothpick inserted into the centre of the loaf comes out clean. And the top of the bread should be golden brown.
  • Let the banana bread cool in the pan for about 10 minutes, then remove it and let cool completely on a wire rack.
