Use a fork to mash the bananas and set aside.3 ripe bananas, mashed
Prepare a loaf pan by lining it with parchment paper. Set aside.
In a large bowl whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, quick oats and brown sugar. Set aside.1 1/4 cup all purpose flour, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp salt, 2 tsp ground cinnamon, 1 cup quick oats, 3/4 cup brown sugar
In a separate bowl whisk together the milk, eggs, melted butter and vanilla.1/4 cup milk, 2 large eggs, 1/2 cup melted butter, 1 tsp vanilla extract
Then add the flour mixture to the milk mixture and mix well.
Stir in the mashed bananas.
Pour the batter into the prepared loaf pan.
Bake for about 1 hour, 10 minutes, or until a toothpick inserted into the centre of the loaf comes out clean. And the top of the bread should be golden brown.
Let the banana bread cool in the pan for about 10 minutes, then remove it and let cool completely on a wire rack.
