Ingredients

  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup plain Greek yogurt
  • 1 1/2 cups milk
  • 2/3 cup melted butter
  • 1/4 cup brown sugar
  • 1 tbsp honey
  • 2 large peaches, diced
  • 3 cups all purpose flour
  • 4 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp salt

Instructions

  • Preheat your waffle iron.
  • Chop the peaches into small pieces. You don't have to remove the skins if you don't want to. Set aside.
    2 large peaches, diced
  • In a bowl whisk together the eggs, vanilla, Greek yogurt, milk, melted butter, brown sugar and honey until smooth. I like to use a hand blender to do this part, it makes the mixture nice and creamy.
4 large eggs, 1 tsp vanilla extract, 1 cup plain Greek yogurt, 1 1/2 cups milk, 2/3 cup melted butter, 1/4 cup brown sugar, 1 tbsp honey
  • In a separate large bowl whisk together the flour, baking powder, baking soda, cinnamon and salt.
3 cups all purpose flour, 4 tsp baking powder, 1 tsp baking soda, 1 tsp baking soda, 1 tsp salt
  • Add the wet ingredients to the dry ingredients, and mix together gently until combined.
  • Stir in the diced peaches.
  • Let the batter sit for about 5 minutes.
  • Once the waffle maker is preheated and ready to use you can start making the waffles. Depending on the size of your maker how much batter you use may differ. For my maker I use 1/4 cup batter for each waffle.
