Ingredients

Meatloaf

  • 1 1/2 lbs lean ground beef
  • 1 lb ground pork
  • 2 tbsp minced onion
  • 1 large egg
  • 1 tsp Worcestershire sauce
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper

Gravy

  • 2 tbsp butter
  • 4 tbsp all purpose flour
  • 2 10.5 oz cans of consommé
  • 2/3 cup half + half cream or heavy cream
  • 1/8 tsp ground black pepper

Instructions

Meatloaf

  • Preheat your oven to 350 degrees F.
  • Combine the ground beef, ground pork, minced onion, egg, Worcestershire sauce, salt and pepper.
1 1/2 lbs lean ground beef, 1 lb ground pork, 2 tbsp minced onion, 1 large egg, 1 tsp Worcestershire sauce, 1/8 tsp salt, 1/8 tsp ground black pepper
  • Press the meatloaf mixture down into a 9 x 5 " loaf pan.
  • Bake for 1 hour, 15 minutes. The internal temperature should be 160 degrees F when done.

Gravy

  • While the meatloaf is baking you should make the gravy.
  • In a small bowl mix together the butter and flour (I use a fork to mash it together).
2 tbsp butter, 4 tbsp all purpose flour
  • In a skillet or saucepan add the consommé and simmer over low to medium heat for 1 - 2 minutes.
2 10.5 oz cans of consommé
  • Add the butter and flour mixture to the consommé and whisk until the gravy is bubbling and thickened.
  • Once the mixture has thickened, whisk in the cream and pepper and simmer until thickened once again.
2/3 cup half + half cream or heavy cream, 1/8 tsp ground black pepper

Putting it all together

  • When the meatloaf is done drain the excess juices, then place the meatloaf onto a serving plate.
  • Slice the meatloaf then pour the gravy over the top and serve with mashed potatoes and lingonberry jam.
