Why does meatloaf have such a bad rap?! I think if you and your kids like meatballs, then what’s not to love about a meatloaf? Meatloaves are much easier to assemble than meatballs and just as delicious! You should definitely try this Swedish meatloaf, it’s so flavourful and yummy.

About this recipe

This is a beef and pork meatloaf served with a rich homemade beef based gravy. The addition of the ground pork makes this meatloaf moist and so delicious.

Serving Suggestion

Serve this Swedish meatloaf with mashed potatoes, green peas, green beans or broccoli, and of course, lingonberry jam! If you don’t have lingonberry jam try cranberry sauce or apricot jam.

Swedish Meatloaf Recipe Tips

MEATLOAF:

  • Beef: Use lean ground beef.
  • Pork: Use regular ground pork

GRAVY:

  • Consommé: If you don’t have consommé you can also use beef broth.
  • Cream: Use Half + Half cream or heavy cream.
  • Too Runny: If your gravy is more runny than you would like just make another small batch of butter/flour and whisk in small amounts at a time until the gravy thickens. Also note, gravy thickens as it cools.
  • Too Thick: Alternatively, if the gravy is too thick, whisk in extra consommé, stock, water or cream until it is the consistency you like.
  • Hot TIP! If you don’t want to make your own gravy, feel free to use a package mix (I don’t judge, in fact I love them!).

MORE TIPS:

  • Leftovers: Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave.

Swedish Meatloaf Recipe

This Swedish Meatloaf Recipe is a delicious take on Swedish meatballs! This easy recipe consists of a flavourful beef and pork meatloaf smothered in a rich gravy. Serve with mashed potatoes and lingonberry jam.

Ingredients
  

Meatloaf

  • 1 1/2 lbs lean ground beef
  • 1 lb ground pork
  • 2 tbsp minced onion
  • 1 large egg
  • 1 tsp Worcestershire sauce
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper

Gravy

  • 2 tbsp butter
  • 4 tbsp all purpose flour
  • 2 10.5 oz cans of consommé
  • 2/3 cup half + half cream or heavy cream
  • 1/8 tsp ground black pepper

Instructions
 

Meatloaf

  • Preheat your oven to 350 degrees F.
  • Combine the ground beef, ground pork, minced onion, egg, Worcestershire sauce, salt and pepper.
  • Press the meatloaf mixture down into a 9 x 5 " loaf pan.
  • Bake for 1 hour, 15 minutes. The internal temperature should be 160 degrees F when done.

Gravy

  • While the meatloaf is baking you should make the gravy.
  • In a small bowl mix together the butter and flour (I use a fork to mash it together).
  • In a skillet or saucepan add the consommé and simmer over low to medium heat for 1 – 2 minutes.
  • Add the butter+flour mixture to the consommé and whisk until the gravy is bubbling and thickened.
  • Once the mixture has thickened, whisk in the cream and simmer until thickened once again.

Putting it all together

  • When the meatloaf is done drain the excess juices, then place the meatloaf onto a serving plate.
  • Slice the meatloaf then pour the gravy over the top and serve with mashed potatoes and lingonberry jam.
