Makes a big batch.

This recipe makes 24 medium sized squares, so you’ll have a lot to enjoy! You can even cut them up into smaller pieces if you want. Also, they freeze well, so you can enjoy some now, and some later.

Peanut Butter Chocolate Chip Banana Oatmeal Bars Recipe Tips

  • Bananas: Use medium sized 4 ripe bananas (about 1 1/2 cups mashed).
  • Oats: Use quick oats, not instant oats. I haven’t tried this recipe with rolled oats yet.
  • Peanut Butter: Use creamy or chunky peanut butter. I haven’t tried this recipe with natural peanut butter so I’m not sure how it would work.
  • Chocolate chips: You can use semi-sweet, milk or dark chocolate chips.
  • Topping: If you like, sprinkle extra chocolate chips onto the top of the batter before baking.
  • Pan Size: Use a 9 x 13 baking pan, line it with parchment paper so the bars can be easily removed.
  • Storage: Store in an airtight container on your counter.
  • Freezing: These bars freeze well. Store in an airtight container in your freezer for up to 3 months.

Peanut Butter Chocolate Chip Banana Oatmeal Bars

Ingredients
  

  • 1/2 cup butter
  • 3/4 cup creamy peanut butter
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups quick oats
  • 1/2 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 4 ripe bananas mashed
  • 1 cup chocolate chips

Instructions
 

  • Preheat your oven to 350 degrees F.
  • Line a 9 x 13 baking pan with parchment paper. Set aside.
  • Mash the bananas. Set aside.
  • Using an electric mixer cream together the butter, peanut butter and brown sugar until smooth.
  • Add the eggs, mixing them in one at a time.
  • Add the vanilla, mix until smooth.
  • In a separate bowl whisk together the oats, flour, baking powder, baking soda and salt.
  • Slowly add the oat/flour mix to the peanut butter mixture, mixing on low until combined.
  • Add in the mashed bananas.
  • Stir in the chocolate chips.
  • Let the mixture sit for about 10 minutes.
  • Add the batter to the prepared baking pan.
  • Sprinkle the top with extra chocolate chips if you like.
  • Bake for 45 minutes.
  • Let the bars cool in the pan for at least 15 minutes before you cut into them.
  • Then cut into 24 bars.
  • Enjoy!

    This will be a hit when I get together with the ladies! Who doesn’t like peanut butter and chocolate? It’s simple and delicious. I like how you integrated oatmeal in there. I would never have thought of this. Fresh bananas is also a plus of course. Kinda makes me think of Elvis with the peanut butter and bananas, lol!
