Easy Chocolate Chip Cottage Cheese Muffins

These Chocolate Chip Cottage Cheese Muffins are moist, chocolatey and so delicious! They're made using a blender, so they're quick and easy too.

These flourless Chocolate Chip Muffins are made with cottage cheese, quick oats and a few other simple ingredients. They’re easy and quick to make, and are a perfect muffin for breakfast, lunch boxes and snacks!

About these muffins:

These Chocolate Chip Cottage Cheese muffins are oat-y, chocolatey and so delicious! Because these muffins are made without flour, they do have a more chewy texture than you might expect from a traditional muffin. But the addition of the cottage cheese makes them so tender and moist…not to mention you get a nice boost of extra protein!

So easy to make!

These are such simple muffins to make! Most of the work is done in a blender (or food processor), so everything comes together easily. All you have to do is place all of the ingredients, except the chocolate chips, into a blender then let it do all the mixing. Once that’s done, just stir in the chocolate chips and bake.

Chocolate Chip Cottage Cheese Muffins Recipe Tips

  • Cottage Cheese: You can use any kind of cottage cheese: 1%, 2% or full fat cottage cheese. If the cottage cheese has a lot of liquid, drain it off first.
  • Oats: This recipe calls for quick oats (not instant oats or rolled oats).
  • Sweetener: This recipe calls for brown sugar, but you can substitute it with honey or maple syrup.
  • Chocolate Chips: You can use semi-sweet chocolate chips, dark chocolate chips or milk chocolate chips. Small chocolate chunks are delicious too!
  • Storage: Keep muffins in an airtight container at room temperature to keep them soft.
  • Freezing: These muffins freeze well. Store in an airtight container or freezer bag for up to 3 months.
  • Meal Prep Tip: Double the batch and freeze half for later!
  • Flavour Tip! You can add in frozen or fresh blueberries instead of chocolate chips.

Baking Tip: About the muffin liners

When baking these muffins, use PARCHMENT PAPER liners NOT paper liners…the muffins will stick to paper liners. If you don’t have parchment paper muffin liners, you can also grease the muffin tin with butter or use a cooking spray.

Easy Chocolate Chip Cottage Cheese Muffins

These Chocolate Chip Cottage Cheese Muffins are moist, chocolatey and so delicious! They're made using a blender, so they're quick and easy too.

Ingredients
  

  • 1 1/2 cups cottage cheese (You can use any kind of cottage cheese: 1%, 2% or full fat cottage cheese. If the cottage cheese has a lot of liquid, drain it off first.)
  • 1 1/2 cups quick oats
  • 2 large eggs
  • 2 tbsp melted butter
  • 2 tsp vanilla extract
  • 3 tbsp packed brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat your oven to 350 degrees F.
  • Line a muffin tin with 12 parchment paper liners, OR grease the pan with butter or a cooking spray. DO NOT use paper liners as the muffins will stick to them.
  • To a blender add all of the ingredient, EXCEPT the chocolate chips.
    1 1/2 cups cottage cheese, 1 1/2 cups quick oats, 2 large eggs, 2 tbsp melted butter, 2 tsp vanilla extract, 3 tbsp packed brown sugar, 2 tsp baking powder, 1/2 tsp salt
  • Blend until mostly smooth, about a minute.
  • Stir in the chocolate chips.

  • Divide the muffin batter evenly between the 12 muffin cups.
  • Bake for 25 minutes. The edges of the muffins should be lightly golden brown.
  • Once done, let the muffins rest for about 5 minutes in the muffin pan, then remove to a wire rack to cool.
