They’re the perfect dessert recipe for any ripe or overripe fruit and berries you might have around that no one wants to eat.

This is a recipe for a classic peach crisp made with sweet ripe peaches. The sweet and juicy peach filling is topped with a delicious oatmeal-cookie like crust that pairs perfectly with the soft filling. Serve for dessert with a scoop of vanilla ice cream or a drizzle of half + half cream. I’ve also been known to eat this for breakfast haha

Fruit Crisp Recipe Tips + Tricks

You can make really any type of fruit crisp that you can dream of. Fruit crisps are so versatile and are perfect for using up ripe or overripe fruit that no one in your house wants to eat. In fact, ripe fruit and berries are more soft and sweet which is perfect for a crisp. Here are some tips:

  • FRUIT: The basic rule of thumb for any type of fruit crisp is to use about 6 cups of chopped fruit or berries. And you can use any type of fruit or mixture of fruit. Ripe or overripe fruit is perfect for fruit crisps because they’re soft and sweet. You can also use thawed frozen fruit.
  • OATS: You can use quick oats or rolled oats.
  • FLOUR: You can use any type of flour: all purpose flour, whole wheat flour, gluten free flour, or a half and half mixture of flour and almond flour.
  • CRUMBLE TOPPING + VARIATIONS: Before baking you can add up to 1/4 cup COMBINED of additional ingredients to the flour mixture: chopped nuts, hemp hearts, wheat germ or oat bran. Sometimes I’ll also add 1-2 teaspoons of chia seeds or flax seeds. If the mixture looks a little dry after mixing in the melted butter, just add more melted butter.
  • BUTTER: I use salted butter. Sometimes I like to substitute the butter with melted coconut oil.
  • SWEETNESS: As a general rule I add about 1/3 cup sugar to the fruit mix. But sometimes some fruit needs a little less or a little more sugar. If you’re making a rhubarb crisp you may want to increase the sugar slightly to balance the tartness from the rhubarb. Or if you have really sweet berries, you may want to decrease the sugar. You can adjust the sweetness to fit your preferences.
  • BAKING DISH: Use any oven safe baking dish or deep pan (9-inch).
  • LEFTOVERS: Store any leftovers in an airtight container in the fridge for up to 3 days.

6 Delicious Fruit Crisp Recipe Variations

  • Classic Apple Crisp – Use 5 – 6 apples, peeled and chopped.
  • Blueberry – Use 6 cups fresh or frozen blueberries. If you love lemon and blueberries together mix in 1 tsp fresh lemon zest.
  • Strawberry Rhubarb – Mix together 3 cups chopped strawberries and 3 cups chopped fresh rhubarb.
  • Peach Raspberry – Mix 4 cups chopped peaches and 1 cup raspberries (fresh or frozen).
  • Very Cherry – Use 5 cups pitted very ripe fresh or frozen cherries. Chop the cherries so they bake better. Sometimes I also add 1 cup raspberries.
  • Mixed Fruit – Mix together 6 cups of any fruit: blueberries, strawberries, peaches, raspberries…

This Easy Peach Crisp is a delicious mixture of baked chopped peaches with an oatmeal brown sugar crust topping. So good for dessert with a scoop of vanilla ice cream!

Ingredients
  

Peach Filling:

  • 6 cups chopped fresh peaches (can also use thawed frozen peaches or canned peaches)
  • 1 tbsp lemon juice
  • 1/3 cup sugar
  • 1 tsp ground cinnamon
  • 1/4 cup water or apple juice

Crisp Topping:

  • 1 cup oats
  • 2/3 cup all purpose flour
  • 1/2 cup brown sugar
  • 1/3 cup melted butter
  • 1/8 tsp salt

Instructions
 

  • Preheat your oven to 350 degrees F.
  • In a bowl mix the chopped peaches, lemon juice, sugar, cinnamon and water.
    6 cups chopped fresh peaches, 1 tbsp lemon juice, 1/3 cup sugar, 1 tsp ground cinnamon, 1/4 cup water or apple juice
  • Let the peach mixture rest while you make the crumble topping. Stir it a couple of times to make sure the peaches are coated in the sugar and peach juice.
  • In a separate bowl combine the oats, flour, salt and brown sugar.
    1 cup oats, 2/3 cup all purpose flour, 1/8 tsp salt, 1/2 cup brown sugar
  • Pour the melted butter over the oat mixture, and stir to combine.
    1/3 cup melted butter
  • Transfer the peach mixture to an oven safe baking dish.
  • Spread the oat mixture over the top of the peach mixture. Do NOT stir.
  • Bake uncovered, for 45 minutes to 1 hour. The crisp topping should be golden brown and the filling should be bubbling up through the sides.
