This simple chicken salad is a great way to use up leftovers! It’s delicious on sandwiches, with bagels, in pita bread, in tortilla or lettuce wraps, with crackers or over a bed of lettuce. Try it in a sandwich made with this delicious homemade oatmeal bread, it’s SO good.


Homemade Chicken Salad Recipe Tips
- CHICKEN: Use any leftover cooked chicken: leftover chicken from dinner the night before, shredded chicken from rotisserie chicken, or even leftover turkey.
- ADDITIONS: This recipe calls for minced onion and chopped celery. But you can also add chopped apples, grapes, pickles, bell peppers or anything you like! You can also add fresh herbs such as fresh dill. It’s such a flexible recipe.
- MUSTARD: This recipe calls for prepared mustard, but feel free to use Dijon mustard too.
- STORAGE: Keep in an airtight container in the fridge for up to 3 days.
- GREAT FOR MEAL PREP! Make a big batch for lunches during the week.


Simple Chicken Salad Recipe
Ingredients
- 2 cups chopped cooked chicken
- 1 tbsp minced onion (can use green onion, red onion, sweet onion)
- 1 celery stalk, chopped
- 1/2 cup mayonnaise
- 2 tsp prepared mustard
- 1/8 tsp seasoning salt
- 1/8 tsp ground black pepper
Instructions
- Chop or shred the cooked chicken. Mince the onion, chop the celery.
- In a bowl combine all of the above ingredients. Mix well.2 cups chopped cooked chicken, 1 tbsp minced onion, 1 celery stalk, chopped, 1/2 cup mayonnaise, 2 tsp prepared mustard, 1/8 tsp seasoning salt, 1/8 tsp ground black pepper
- Serve and enjoy.
