Sugar cookies should be soft, chewy and flavourful, and these are! And they’re the perfect base for the addition of gumdrops…chewy delicious little bites of candy in every bite. Make them festive for any occasion: red and green for the holidays, red and pink for Valentine’s day, rainbow for St. Patrick’s day…the possibilities are endless!

These nut-free cookies are perfect for bake sales, cookie exchanges, gift giving and holiday treat plates! They’re easy to make, easy to pack and delicious to receive.

Gumdrop Sugar Cookie Recipe Tips

  • Gumdrops: I use baking gumdrops (here in Canada you can find them at Bulk Barn). You can use regular gumdrops as well, you’ll just need to cut them into smaller pieces.
  • TIP! I like to press a few extra gumdrops into the tops of each cookie before baking. This makes the cookies look really yummy!
  • Storage: Keep in an airtight container or they will dry out quickly.
  • Freezing: These cookies freeze well. Store in a freezer ziplock bag or airtight container in the freezer for up to 1 month.

Gumdrop Sugar Cookies

These Gumdrop Sugar Cookies are SO delicious. Soft, slightly chewy and full of yummy gumdrops. Perfect for the holidays!

Ingredients
  

  • 1 cup butter
  • 1 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 2 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup baking gumdrops

Instructions
 

  • Preheat your oven to 350 degrees F.
  • Using an electric mixer cream the butter and sugar together until soft and fluffy. This will take 10-15 minutes. Make sure to the scrape the sides of the bowl several times during this mixing.
  • Once the sugar and butter mixture is fluffy, add the egg and vanilla. Mix well.
  • In a separate bowl whisk together the flour, baking powder and salt.
  • Add the dry ingredients to the wet ingredients and mix well.
  • Stir in the baking gumdrops.
  • Roll the cookie dough into 1 1/2 inch balls.
  • Place the dough balls on a parchment paper lined cookie sheet about 1 1/2 inches apart, and flatten the tops slightly.
  • Tip! I like to add a few extra gumdrops to the tops of each cookie before baking (it looks nice).
  • Bake for 10 minutes (the edges should be only slightly golden).
  • Let the cookies cool on a wire rack.
