These pumpkin spice cookies are soft, chewy and cakey all at the same time. Most of the flavour/spice comes from the box cake mix, so make sure to use a good cake mix. If you taste the batter and feel like it needs more flavour, feel free to add extra pumpkin spice to the batter, starting 1/4 tsp at a time.
Pumpkin Spice Cookie Recipe Tips
- Pumpkin: Make sure to use pure pumpkin puree, NOT pumpkin pie filling. This recipe calls for 2 cups, but if the can you have is about 15 ounces you can use that.
- Cake Mix: Use a dry Spice Cake mix (about 15 g). Do not make the cake, you want the whole dry mix.
- Chocolate Chips: This recipe calls for mini chocolate chips, but you can use semi-sweet chocolate chips, dark chocolate chips, milk chocolate chips or white chocolate chips.
- Storage: Keep cookies in an airtight container to keep them soft and chewy.
- Freezing: These cookies freeze well for up to 3 months

The dough for these pumpkin spice cookies is sticky, so make sure to line a baking sheet with parchment paper or they will stick to the pan.

Ingredients
- 1 box spice cake mix (375 g)
- 2 cups pure pumpkin purée (a ~15 oz can)
- 3/4 cup mini chocolate chips
Instructions
- Preheat your oven to 375 degrees F.
- Using a stand mixer, combine the dry cake mix and pumpkin puree.
- Stir in the chocolate chips.
- Line a baking sheet with parchment paper, then add scoops of the cookie batter, about 9 to a sheet (make sure they are about 2 inches apart). See pictures above.
- Bake for 10-12 minutes.
